Equipment

  • Large bowl
  • Mixing spoon
  • Baking sheets
  • Parchment paper

Ingredients

Main Ingredients

  • 1 1/2 cups unsalted butter softened
  • 1 cup granulated sugar
  • 1 egg
  • 1 tsp vanilla extract
  • 3 1/4 cups all-purpose flour
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1/4 tsp cream of tartar
  • 4 packages Jell-O powder 3 oz each, assorted fruity flavors

Instructions

  • Step 1: Preheat your oven to 350°F (175°C). Line baking sheets with parchment paper.
  • Step 2: Cream the softened butter and granulated sugar together in a large bowl for 2 to 3 minutes until light and fluffy.
  • Step 3: Beat in the egg and vanilla extract until smooth and combined.
  • Step 4: In a separate bowl, whisk together the flour, baking powder, baking soda, and cream of tartar.
  • Step 5: Gradually add the dry ingredients to the wet mixture and stir until a soft, cohesive dough forms.
  • Step 6: Divide the dough into four equal portions.
  • Step 7: Add one package of Jell-O powder to each dough portion and knead gently until fully incorporated and colored.
  • Step 8: Roll each dough portion into 1-inch balls. Optionally, roll balls in sugar or extra Jell-O powder for extra sparkle.
  • Step 9: Place the balls on the prepared baking sheets, spacing them apart.
  • Step 10: Flatten each ball gently with the bottom of a glass about halfway down.
  • Step 11: Bake for 8 to 10 minutes until edges set but centers remain soft.
  • Step 12: Cool cookies on the baking sheet for 5 minutes, then transfer to a wire rack to cool completely.
