Ingredients
  

Jell-O Layers

  • 1 box strawberry Jell-O for the pink layer
  • 1 box lemon Jell-O for the yellow layer
  • 1 box berry blue Jell-O for the blue layer
  • 3 cups boiling water to dissolve each Jell-O flavor
  • 3 cups cold water to help gelatin set

Creamy Layers

  • 1 cup whipped topping for creamy, fluffy texture and pastel layers
  • 0.5 cup vanilla yogurt optional, adds tang and richness

Garnishes

  • fresh berries raspberries, strawberries, or blueberries for garnish
  • sprinkles or mini marshmallows optional, for extra fun and sweetness on top

Instructions
 

  • Step 1: Dissolve each Jell-O flavor separately by pouring 1 cup boiling water into a bowl with the Jell-O powder and stirring until dissolved. Repeat for strawberry, lemon, and berry blue.
  • Step 2: Stir 1 cup cold water into each Jell-O bowl to cool and prepare for setting.
  • Step 3: Let the Jell-O mixtures sit at room temperature for 20-30 minutes until thickened to a loose syrup consistency.
  • Step 4: (Optional) Mix half of each cooled Jell-O with whipped topping or vanilla yogurt to create creamy pastel layers.
  • Step 5: Pour the first layer (plain or creamy Jell-O) about 1/3 to 1/2 inch thick into clear cups. Chill in the refrigerator for about 20 minutes until slightly set.
  • Step 6: Spread a thin layer of whipped topping over the set Jell-O layer for contrast.
  • Step 7: Repeat layering different Jell-O colors and creamy layers, chilling for 20 minutes between each to keep layers neat.
  • Step 8: After all layers are added, refrigerate the parfaits for 2-3 hours until fully set.
  • Step 9: Just before serving, garnish each parfait with fresh berries and a sprinkle of sprinkles or mini marshmallows.

Notes

For vegan parfaits, use agar-agar instead of gelatin and plant-based whipped toppings and yogurts. Prepare Jell-O mixtures a day ahead and assemble quickly when ready. Store parfaits covered in the refrigerator up to 3 days.
