  • 1 can sweetened condensed milk 14 oz
  • 1 tsp vanilla extract
  • 4 cups shredded sweetened coconut plus extra for rolling
  • gel food coloring pastel shades (pink, yellow, blue, green, purple)

Instructions
 

  • Step 1: In a large mixing bowl, combine the sweetened condensed milk and vanilla extract. Stir gently until smooth and evenly mixed.
  • Step 2: Gradually fold in the shredded sweetened coconut until the mixture is moist but firm enough to hold shape. Add more coconut if mixture feels too wet.
  • Step 3: Divide the coconut mixture into 4 or 5 equal portions depending on how many colors you want to create.
  • Step 4: Add a few drops of gel food coloring to each portion and knead the color evenly through the coconut. Use gloves if preferred.
  • Step 5: Pinch off small amounts of the colored mixture and roll into 1-inch balls. Rustic shapes are fine.
  • Step 6: Roll each ball in extra shredded coconut until fully coated for a snowy, fluffy look.
  • Step 7: Place the coated coconut tails on a parchment-lined baking sheet and refrigerate for at least 1 hour to set.
  • Step 8: Serve chilled or at room temperature. Enjoy as a festive Easter treat or gift.

Notes

Use unsweetened coconut for a less sweet version; add almond or coconut rum extract for flavor twists. Mix in chopped nuts or dip in chocolate after chilling for variety. Store in airtight container in fridge up to one week or freeze up to 2 months.
