Notes

Substitutions & Additions: If you don't have coconut rum, regular white rum works (consider adding a splash of coconut extract). Adjust sweetness by slightly reducing cream of coconut or adding a dash of simple syrup. Experiment with other fruit juices like mango or peach. For extra garnish fun, try a pineapple wedge, maraschino cherry, or a tiny umbrella. For a non-alcoholic version, skip the rum and curaçao, adding extra pineapple juice and optional blue food coloring, or a little cream soda.
Tips for Success: Always use chilled glasses (pop them in the freezer for 15-20 minutes) to keep your drink colder longer. Fresh pineapple juice and a good quality cream of coconut make a big difference in flavor. Don't over-shake; 15-20 seconds is perfect to chill without too much dilution. Use plenty of fresh ice in both your shaker and serving glasses.
Storage: This cocktail is best enjoyed fresh. However, you can pre-mix the liquid ingredients (coconut rum, blue curaçao, pineapple juice, and cream of coconut) in a sealed pitcher or jar and store it in the refrigerator for up to 2-3 days. Stir the mixture well before serving, then proceed with shaking and pouring individual servings. Do not garnish until right before serving to maintain freshness and appearance.
