Ingredients
  

For the Pie Filling

  • sweetened coconut flakes
  • crushed pineapple, well drained
  • maraschino cherries, drained and chopped
  • chopped pecans
  • sweetened condensed milk
  • fresh lemon juice
  • 1 tbsp maraschino cherry juice a splash
  • whipped topping store-bought or homemade

For the Crust

  • 1 pie graham cracker crust store-bought or homemade

Optional Garnish

  • extra whipped topping for garnish
  • whole maraschino cherries for garnish

Instructions
 

  • Step 1: In a large mixing bowl, combine sweetened coconut flakes, well-drained crushed pineapple, chopped maraschino cherries, chopped pecans, sweetened condensed milk, fresh lemon juice, and 1 tablespoon of maraschino cherry juice. Stir gently to blend evenly.
  • Step 2: Gently fold in the whipped topping with a spatula until fully combined but still airy.
  • Step 3: Pour the filling into the graham cracker crust and smooth the top evenly with the back of a spoon or offset spatula.
  • Step 4 (optional): Garnish with extra whipped topping and whole maraschino cherries for a pretty presentation.
  • Step 5: Refrigerate the pie for at least 3 hours, preferably overnight, to allow flavors to meld and the pie to set.

Notes

Drain pineapple well to avoid a watery pie. For a nut-free version, omit pecans. You can swap the graham cracker crust for vanilla wafer or chocolate cookie crusts. Use fresh lemon juice for best flavor. For a grown-up twist, add a tablespoon of rum or coconut rum.
