Equipment

  • 9x13-inch baking dish
  • Large bowl
  • Whisk
  • Spatula

Ingredients

For the Breakfast Bake

  • 5 large croissants (preferably day-old), cut into 1-inch pieces
  • 1 cup semi-sweet chocolate chips or dark or milk chocolate chips
  • 2 cups whole milk 2% milk can be used
  • 4 large eggs
  • 0.5 cup granulated sugar
  • 1 tsp vanilla extract
  • 0.25 tsp salt

Optional Topping

  • powdered sugar for dusting
  • fresh berries or whipped cream for serving

Instructions

  • Step 1: Preheat your oven to 350°F (175°C). Lightly grease a 9x13-inch baking dish.
  • Step 2: Arrange the croissant pieces evenly in the prepared baking dish. Sprinkle the chocolate chips all over and tuck some in between the croissant pieces.
  • Step 3: In a large bowl, whisk together the milk, eggs, granulated sugar, vanilla extract, and salt until everything is beautifully combined and smooth.
  • Step 4: Carefully pour the custard mixture evenly over all the croissants in the dish. Gently press down on the croissants with a spatula to help them soak up the custard. Let it sit for about 10-15 minutes.
  • Step 5: Pop the baking dish into your preheated oven, uncovered, and bake for about 45-50 minutes. The top should be a golden brown and the custard set when gently jiggled. If the top browns too quickly, tent with foil for the last 10-15 minutes.
  • Step 6: Once done, pull it out and let it cool slightly for a few minutes. Before serving, dust generously with powdered sugar. Serve warm, optionally with fresh berries or a dollop of whipped cream.

Notes

For best results, use day-old croissants as they absorb the custard better, or dry fresh ones out on the counter. Don't rush the 10-15 minute soaking time, as it's crucial for a moist interior. Avoid overbaking, as it can lead to a dry or rubbery texture; a slight jiggle in the center is fine. This bake is truly best served warm. You can assemble the entire dish (steps 1-4) the night before, cover, and refrigerate; if baking from cold, add an extra 10-15 minutes to the baking time. Store any leftovers in an airtight container in the refrigerator for 3-4 days. Reheat individual portions in the microwave or gently warm slices in a preheated oven.
