  • 1 cup beer or club soda, sparkling water, or milk

  • 2 cups jalapeno peppers sliced, about 5-6 large

Instructions
 

  • Step 1: Prep Your Jalapeños: Carefully cut off the stems from your jalapeño peppers. Slice each one in half lengthwise. To control heat, scrape out seeds and white membrane for milder flavor, or leave some/all for more heat. After halving, slice each half into spears or thin sticks.
  • Step 2: Whip Up the Batter: In a medium-sized bowl, whisk together all-purpose flour, kosher salt, black pepper, chili powder, and garlic powder. Crack in the two large eggs and pour in the cup of beer. Whisk everything until you have a smooth batter that clings to the jalapeños (adjust thickness with more beer or flour if needed).
  • Step 3: Heat the Oil: Pour vegetable oil into a deep fryer or a large, heavy-bottomed skillet, ensuring enough to mostly submerge the jalapeño pieces. Heat the oil over medium-high heat until it reaches 365°F (185°C). Use a kitchen thermometer for best results.
  • Step 4: Dip and Coat: Once the oil is hot, dip the prepared jalapeño spears into the batter, ensuring they are fully coated on all sides. Let any excess batter drip off.
  • Step 5: Fry to Golden Perfection: Carefully place the battered jalapeños into the hot oil. Do not overcrowd the pan; fry in batches to maintain oil temperature. Fry until they turn a beautiful golden brown, become crispy, and float to the surface (usually a few minutes per batch).
  • Step 6: Drain and Season: Use a slotted spoon or spider strainer to remove the fried jalapeños from the oil. Immediately place them onto a plate lined with paper towels to drain excess oil. While still hot, sprinkle with a little extra kosher salt, if desired, to enhance the flavors.

The spice level is adjustable by removing seeds and membrane. For the batter, beer can be substituted with club soda, sparkling water, or milk. Feel free to customize seasonings (e.g., onion powder, smoked paprika, cayenne) and serve with various dipping sauces like ranch or sriracha mayo. Key tips for success include maintaining oil temperature at 365°F (185°C), not overcrowding the pan, patting jalapeños dry before battering, and seasoning immediately after frying.
