  • Step 1: Prep the Cheese: Cut each mozzarella stick in half (optional, for snackable bites). Place them on a plate or baking sheet lined with parchment paper. Freeze for at least 30 minutes; this crucial step prevents melting during cooking.
  • Step 2: Set Up Breading Station: Prepare three shallow bowls. In the first, add all-purpose flour and a pinch of salt and pepper. In the second, whisk eggs. In the third, combine panko breadcrumbs, Italian seasoning, garlic powder, onion powder, and another pinch of salt; mix well.
  • Step 3: Coat the Cheese Sticks: Take frozen mozzarella sticks. Dip each first into seasoned flour (shake off excess), then into beaten egg (drip off excess), and finally coat generously with the seasoned panko breadcrumb mixture, pressing firmly to adhere. Repeat for all sticks.
  • Step 4: Air Fry: Preheat your air fryer to 390°F (200°C) for about 5 minutes. Lightly spray the air fryer basket with cooking spray. Place breaded mozzarella sticks in a single layer, ensuring they don’t touch (cook in batches if needed).
  • Step 5: Cook: Air fry for 6-8 minutes. At the 4-minute mark, open the basket and carefully flip them over to ensure even browning and crispiness. Cook until golden-brown and gooey inside.
  • Step 6: Serve: Carefully remove the mozzarella sticks from the air fryer. Let them cool for about a minute. Serve warm with your favorite marinara sauce for dipping.

Cooked mozzarella sticks can be stored in an airtight container in the refrigerator for up to 3-4 days. Reheat in the air fryer at 350°F (175°C) for 3-5 minutes until crispy; avoid microwaving as it makes them soggy. You can use regular breadcrumbs, but panko gives a superior crispy texture. To get super stretchy cheese, use full-fat mozzarella and serve immediately.
