  • 2 cans butter beans (15 oz each), drained and rinsed
  • 1 small onion finely chopped
  • 3 cloves garlic minced
  • 0.5 cup sun-dried tomatoes packed in oil, drained and chopped
  • 2 tbsp olive oil
  • 1 tsp Italian seasoning
  • 0.5 tsp red pepper flakes optional
  • 0.25 tsp salt
  • 0.25 tsp freshly ground black pepper
  • 0.5 cup chicken or vegetable broth
  • 1 cup heavy cream
  • 0.5 cup grated Parmesan cheese
  • 0.25 cup fresh basil leaves chopped

Instructions
 

  • Step 1: Grab a large skillet, drizzle in 2 tablespoons of olive oil, and set over medium heat. Once shimmering, add the finely chopped onion and cook for about 5 minutes, stirring occasionally, until soft and translucent.
  • Step 2: Add the 3 cloves of minced garlic to the skillet. Stir and cook for just 1 minute until fragrant, being careful not to let it brown or burn.
  • Step 3: Stir in the chopped sun-dried tomatoes, Italian seasoning, red pepper flakes (if using), salt, and black pepper. Cook for another minute, allowing the spices to bloom in the hot oil.
  • Step 4: Pour in the drained and rinsed butter beans and the chicken or vegetable broth. Stir everything well to combine and allow the beans to soak up the flavors.
  • Step 5: Pour in the heavy cream. Bring the mixture to a gentle simmer, then let it bubble away for 5-7 minutes, stirring occasionally. The sauce should begin to thicken beautifully.
  • Step 6: Remove the skillet from the heat and stir in the grated Parmesan cheese until completely melted and integrated into the sauce, making it smooth and luxurious.
  • Step 7: Stir in most of the freshly chopped basil leaves right before serving. Garnish with the remaining basil for a pop of color and freshness. Serve immediately.
