Ingredients
  

  • 4 boneless, skinless chicken breasts The star of the show! I prefer using organic when I can.
  • salt and pepper to taste. Don't be shy with the seasoning!
  • 2 tablespoons olive oil For a nice golden-brown sear on the chicken.
  • 3 cloves garlic minced. Fresh garlic adds so much flavor.
  • 1 cup chicken broth Use low-sodium if you’re watching your salt intake.
  • 1/2 cup heavy cream This is what makes the sauce so luxuriously creamy. You can use half-and-half for a lighter version.
  • 1/4 cup lemon juice Freshly squeezed is best! It adds that bright, zingy flavor.
  • 1 teaspoon lemon zest Don't skip this! The zest adds a wonderful aromatic layer to the dish.
  • 1/4 cup grated Parmesan cheese optional. Adds a salty, cheesy richness. If you don't have it on hand it's perfectly fine without it!
  • fresh parsley chopped (for garnish). A pop of fresh green color and flavor.

Instructions
 

  • Step 1: Season your chicken breasts generously with salt and pepper. I like to pat them dry with a paper towel first for better browning.
  • Step 2: Heat the olive oil in a large skillet over medium heat. Once hot, add the chicken breasts and cook for 5-6 minutes per side, until they are golden brown and cooked through. Remember to use a meat thermometer to ensure the internal temperature reaches 165°F (74°C).
  • Step 3: Remove the chicken from the skillet and set aside. Leave any yummy browned bits in the pan – they add flavor to the sauce!
  • Step 4: Add the minced garlic to the skillet and sauté for about 1 minute, until fragrant. Don’t let it burn!
  • Step 5: Pour in the chicken broth, lemon juice, and lemon zest. Bring to a simmer and cook for 2-3 minutes, allowing the sauce to slightly reduce.
  • Step 6: Stir in the heavy cream and Parmesan cheese (if using). Continue to simmer until the sauce has thickened slightly, about 2-3 minutes more. It should coat the back of a spoon.
  • Step 7: Return the chicken to the skillet and let it simmer in the sauce for a few minutes, just to coat everything nicely.
  • Step 8: Garnish with fresh parsley and serve immediately. Enjoy!

Notes

Feel free to experiment! You could add a pinch of red pepper flakes for a little heat, or some sun-dried tomatoes for a deeper, richer flavor. Instead of Parmesan, try using Asiago or Pecorino Romano. If you don't have fresh parsley, dried will work in a pinch. Leftovers can be stored in an airtight container in the refrigerator for up to 3 days. Reheat gently in the microwave or on the stovetop. This dish freezes well. Allow it to cool completely before freezing in an airtight container for up to 3 months.
