Step 1: Cook pasta in a large pot of salted water. Bring a large pot of salted water to a rolling boil. Add your 9 lasagna noodles and cook them according to the package instructions until they're al dente. You want them flexible but not mushy. Once they’re done, drain them thoroughly. Lay them out flat on a clean baking sheet or parchment paper to prevent sticking while prepping the filling.
Step 2: Prepare the filling. In a big bowl, combine your chopped cooked shrimp, crab meat, creamy ricotta cheese, about half of your Alfredo sauce, and minced garlic. Stir well to ensure everything is perfectly combined. Season with salt and pepper to your liking.
Step 3: Prepare the baking dish. Grab a 9x13 inch baking dish. Pour a thin layer of the remaining Alfredo sauce onto the bottom of the dish. This creates a cozy bed for our roll-ups and keeps them from sticking.
Step 4: Assemble the roll-ups. Lay out one cooked lasagna noodle on a clean surface. Spoon an even amount of your shrimp and crab mixture onto one end of the noodle, spreading it almost to the edges. Carefully and gently roll up the noodle. Take your time, they don't need to be perfectly tight.
Step 5: Arrange in the baking dish. Place your beautifully rolled noodles, seam-side down, into your prepared baking dish. Arrange them snugly next to each other.
Step 6: Top with sauce and cheese. Pour the rest of that luscious Alfredo sauce evenly over all the roll-ups. Make sure every single roll-up gets a generous coating. Sprinkle with both the shredded mozzarella and grated Parmesan cheeses.
Step 7: Bake the roll-ups. Preheat your oven to 375°F (190°C). Once it's hot, cover your baking dish tightly with aluminum foil. Bake for 20 minutes.
Step 8: Brown the cheese. After 20 minutes, carefully remove the foil. Continue to bake for an additional 10 minutes, or until the cheese is beautifully melted, bubbly, and has those lovely golden-brown spots.
Step 9: Rest and serve. Let the lasagna roll-ups cool for just a few minutes before serving. This allows the sauce to set slightly, making them easier to serve without falling apart. Garnish with fresh parsley for a pop of color and freshness. Serve immediately.
