Ingredients
  

  • 9 lasagna noodles Use regular or no-boil, but for this recipe, boiling them first is key!
  • 1 cup cooked shrimp chopped; You can buy pre-cooked shrimp to save time, or quickly sauté some fresh ones. Chop them into bite-sized pieces so they blend beautifully.
  • 1 cup crab meat Fresh or good quality canned crab (drained well!) works wonders. This adds a lovely sweet and delicate flavor.
  • 2 cups Alfredo sauce Your favorite jarred Alfredo sauce is totally fine here for convenience, or if you're feeling fancy, whip up a quick homemade batch!
  • 1 cup ricotta cheese
  • 1 cup mozzarella cheese shredded; For that irresistible gooey, bubbly top!
  • 0.5 cup Parmesan cheese grated; Adds a sharp, salty punch that complements the seafood perfectly.
  • 1 tbsp garlic minced; Because everything is better with garlic, right?
  • 1 tbsp olive oil Just a touch for sautéing or preparing your baking dish.
  • Salt to taste; Always season as you go!
  • Pepper to taste; A little crack of black pepper truly enhances the flavors.
  • Fresh parsley for garnish; Not just pretty, it adds a lovely fresh finish.

Instructions
 

  • Step 1: Cook pasta in a large pot of salted water. Bring a large pot of salted water to a rolling boil. Add your 9 lasagna noodles and cook them according to the package instructions until they're al dente. You want them flexible but not mushy. Once they’re done, drain them thoroughly. Lay them out flat on a clean baking sheet or parchment paper to prevent sticking while prepping the filling.
  • Step 2: Prepare the filling. In a big bowl, combine your chopped cooked shrimp, crab meat, creamy ricotta cheese, about half of your Alfredo sauce, and minced garlic. Stir well to ensure everything is perfectly combined. Season with salt and pepper to your liking.
  • Step 3: Prepare the baking dish. Grab a 9x13 inch baking dish. Pour a thin layer of the remaining Alfredo sauce onto the bottom of the dish. This creates a cozy bed for our roll-ups and keeps them from sticking.
  • Step 4: Assemble the roll-ups. Lay out one cooked lasagna noodle on a clean surface. Spoon an even amount of your shrimp and crab mixture onto one end of the noodle, spreading it almost to the edges. Carefully and gently roll up the noodle. Take your time, they don't need to be perfectly tight.
  • Step 5: Arrange in the baking dish. Place your beautifully rolled noodles, seam-side down, into your prepared baking dish. Arrange them snugly next to each other.
  • Step 6: Top with sauce and cheese. Pour the rest of that luscious Alfredo sauce evenly over all the roll-ups. Make sure every single roll-up gets a generous coating. Sprinkle with both the shredded mozzarella and grated Parmesan cheeses.
  • Step 7: Bake the roll-ups. Preheat your oven to 375°F (190°C). Once it's hot, cover your baking dish tightly with aluminum foil. Bake for 20 minutes.
  • Step 8: Brown the cheese. After 20 minutes, carefully remove the foil. Continue to bake for an additional 10 minutes, or until the cheese is beautifully melted, bubbly, and has those lovely golden-brown spots.
  • Step 9: Rest and serve. Let the lasagna roll-ups cool for just a few minutes before serving. This allows the sauce to set slightly, making them easier to serve without falling apart. Garnish with fresh parsley for a pop of color and freshness. Serve immediately.

Notes

Substitutions & Additions: Not a fan of crab? Use all shrimp! You could also try cooked, shredded chicken for a Chicken Alfredo version. Sautéed spinach, finely diced bell peppers, or mushrooms can be folded into the filling for extra nutrients and flavor. A touch of provolone or fontina cheese could add a delightful twist to the cheesy topping. A pinch of red pepper flakes in the filling or sauce adds a subtle kick. While Alfredo is classic, a rosé sauce (Alfredo mixed with marinara) could also be a fun experiment!
Tips for Success: Don't overcook noodles; al dente is key! Overcooked noodles will tear easily when you try to roll them. If using canned crab or frozen shrimp, make sure they are thoroughly drained to avoid a watery filling. Press out any excess liquid. Distribute the filling as evenly as possible on each noodle for consistent rolls. You can assemble the entire dish, cover it tightly with foil, and refrigerate it for up to 24 hours before baking. Add an extra 10-15 minutes to the covered baking time if baking from cold. This dish freezes beautifully! Assemble as directed, cover tightly with foil, and freeze for up to 2-3 months. Thaw overnight in the refrigerator before baking, or bake from frozen (this will significantly increase baking time – often double).
Storage & Reheating: Store any leftover roll-ups in an airtight container in the refrigerator for up to 3-4 days. For best results, reheat individual portions in the microwave until warmed through. For larger amounts, cover with foil and reheat in an oven preheated to 350°F (175°C) until bubbly and hot.
