Ingredients
  

  • 1 cup fresh cilantro leaves packed, stems removed, rinsed
  • 1/2 cup mayonnaise
  • 1/4 cup sour cream or Greek yogurt
  • 2 cloves garlic roughly chopped
  • 1 tbsp fresh lime juice or lemon juice
  • 1 tbsp olive oil
  • Salt to taste
  • 1-2 tbsp water to thin, if needed
  • 1 small jalapeño optional, seeds removed for mild spice, seeds kept for extra heat

Instructions
 

  • Step 1: Gather all your ingredients and have them ready. You'll need a blender or a food processor.
  • Step 2: Carefully add the cilantro, mayonnaise, sour cream or Greek yogurt, roughly chopped garlic, fresh lime juice, olive oil, and a pinch of salt into your blender or food processor. If using, add the jalapeño (with or without seeds depending on desired heat).
  • Step 3: Secure the lid and blend until super smooth and creamy, with no little bits of cilantro or garlic left.
  • Step 4: Check the consistency. If you want it thinner (more like a drizzle), add water, one tablespoon at a time. Blend briefly after each addition until you reach your desired texture.
  • Step 5: Taste the sauce and adjust the seasoning as needed. Add more salt, lime juice, or garlic to taste until it is perfect.
  • Step 6: Serve immediately, or for best flavor, pop it in the fridge for at least 30 minutes to allow the flavors to meld and deepen.

Notes

Use fresh cilantro and garlic for the best vibrant flavor. Start small with added liquids like water and lime juice, as it's easier to add more than take away. Letting it chill in the fridge for a bit truly makes a difference in flavor. Store leftovers in an airtight container in the refrigerator for about 5-7 days. Freezing is not recommended as the texture can change.
