Creamsicle Vodka Jello Roll-Ups

This recipe captures the nostalgic feeling of popsicles with a grown-up twist. It's unbelievably easy, ridiculously fast, and guaranteed to be a crowd-pleaser.

Equipment

  • Small bowl for blooming gelatin
  • small saucepan for heating orange juice and sugar
  • 9x13-inch baking dish for setting jello

  • 1 cup orange juice freshly squeezed is best, but bottled works too!
  • 0.5 cup vodka your favorite brand will do!
  • 1 packet (3 oz) orange-flavored gelatin I love the bright color of Jell-O
  • 0.25 cup granulated sugar helps balance the tartness of the orange
  • 1 cup whipped cream store-bought is perfectly fine, save yourself some time!
  • 1 cup cold water for the gelatin
  • 3 tablespoons cold water to bloom the gelatin
  • 0.25 teaspoon vanilla extract for a touch of warmth and extra flavor

Instructions
 

  • Bloom the gelatin by combining 3 tablespoons of cold water and the gelatin in a small bowl; let sit for 5 minutes.
  • Combine orange juice and sugar in a saucepan; stir until sugar dissolves. Heat over medium heat until hot (don't boil).
  • Remove from heat; add bloomed gelatin and stir until dissolved.
  • Stir in vodka and vanilla extract.
  • Cool to room temperature.
  • Gently fold in whipped cream; don't overmix.
  • Line a 9x13 inch baking dish with plastic wrap; pour in jello mixture and spread evenly (1/2-inch thickness).
  • Refrigerate for at least 4 hours, or until set.
  • Lift jello from dish using plastic wrap.
  • Cut into 1-1.5 inch wide strips; roll up and serve.

Notes

Feel free to get creative! Try using different citrus juices or adding a splash of orange liqueur. For a fun twist, sprinkle mini chocolate chips or chopped nuts on top before rolling. Make ahead and store in the refrigerator for up to 3 days.
