Ingredients
  

  • 1 lb boneless, skinless chicken breasts approx. 3-4 breasts, cut into bite-sized pieces
  • 3 cloves fresh garlic minced
  • 1 inch piece fresh ginger minced
  • 1 cup coconut milk full-fat or light
  • 4 cups low-sodium chicken broth
  • 1 lime juice freshly squeezed
  • low-sodium soy sauce to taste
  • bell peppers sliced, any color, to taste
  • carrots sliced thinly, to taste
  • spinach or other seasonal vegetables optional; e.g., mushrooms, snow peas
  • cooking oil e.g., vegetable or coconut oil, small amount

Instructions
 

  • Step 1: Cut chicken into bite-sized pieces; mince garlic and ginger.
  • Step 2: In a large pot or Dutch oven, heat cooking oil over medium heat. Add minced garlic and ginger; sauté for about 1 minute until fragrant.
  • Step 3: Add chicken pieces to the pot. Cook for about 5 minutes, stirring, until no longer pink on the outside and partially cooked.
  • Step 4: Pour in chicken broth and coconut milk. Stir well to combine.
  • Step 5: Add sliced bell peppers and carrots. Reduce heat to low, cover, and simmer for about 10 minutes until vegetables are tender. If using, stir in optional greens (like spinach) during the last 2-3 minutes until wilted.
  • Step 6: Remove from heat. Stir in fresh lime juice and low-sodium soy sauce to taste. Ladle into bowls and serve hot.

This soup is highly adaptable: swap chicken for pork, shrimp, or tofu; add other vegetables like broccoli, mushrooms, or snow peas. For extra heat, add red pepper flakes or sriracha. Serve over noodles or rice for a heartier meal. Always use fresh ginger and garlic for the best flavor, and taste to adjust seasoning before serving.
