Ingredients
  

  • 1 lb lean ground beef drain well
  • 1 medium onion diced
  • 2 cloves garlic minced
  • 1 tsp cumin
  • 1 tsp chili powder
  • 8 flour or corn tortillas warm corn tortillas if using
  • 2 cups enchilada sauce store-bought or homemade
  • 1 cup shredded cheddar or Monterey Jack cheese
  • sour cream for topping

Instructions
 

  • Step 1: Preheat your oven to 375°F (190°C).
  • Step 2: In a large skillet over medium heat, brown ground beef and diced onions for about 5-7 minutes until beef is fully browned and onions are soft. Drain any excess fat.
  • Step 3: Stir in minced garlic, cumin, and chili powder. Cook for one more minute, stirring constantly, until aromatic.
  • Step 4: Spoon a generous portion of the seasoned beef mixture down the center of each tortilla. Roll each tortilla up tightly and place them seam-side down in a greased 9x13 inch baking dish.
  • Step 5: Pour the enchilada sauce evenly over all the rolled tortillas, then sprinkle shredded cheese all over the top.
  • Step 6: Bake uncovered for 20-25 minutes, or until the sauce is bubbly and the cheese is melted and golden brown.
  • Step 7: Carefully remove from the oven. Serve hot with a dollop of sour cream on top.

Notes

Make it your own with different meats like ground turkey or chicken, or add a veggie boost with bell peppers, corn, or black beans. Experiment with various cheeses or enchilada sauces. For best results, don't overfill tortillas, warm corn tortillas before rolling, and always drain fat from ground beef. You can assemble these enchiladas up to a day in advance and store leftovers in an airtight container in the fridge for 3-4 days, or freeze for 2-3 months. Reheat in the microwave or oven.
