  • 3 cups cooked shredded chicken rotisserie chicken works well
  • 1 can cream of chicken soup
  • 1 cup sour cream
  • 1 cup shredded cheddar cheese
  • 6 slices bacon cooked and crumbled
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1 bag tater tots 32 oz bag
  • salt and pepper to taste
  • green onions optional, chopped for topping

Instructions
 

  • Step 1: Preheat your oven to 375°F (190°C).
  • Step 2: In a large bowl, combine cooked shredded chicken, cream of chicken soup, sour cream, shredded cheddar cheese, garlic powder, onion powder, salt, and pepper. Taste and adjust seasoning if needed.
  • Step 3: Fold in half of the crumbled cooked bacon into the chicken mixture.
  • Step 4: Grease a 9x13 inch baking dish and spread the chicken mixture evenly in the bottom. Arrange the tater tots in a single layer on top of the mixture.
  • Step 5: Bake in the preheated oven for 35–40 minutes until the tater tots are golden and crispy, and the casserole is bubbling.
  • Step 6: Remove from oven and sprinkle the remaining crumbled bacon and optional chopped green onions over the top. Serve immediately.

Notes

Substitute cream of chicken soup with cream of mushroom or celery for variation. Add veggies like chopped bell peppers, mushrooms, or spinach to the chicken mixture for extra nutrition. For extra crunchy topping, sprinkle crushed crackers or fried onions before baking. Store leftovers tightly covered in the fridge for 3-4 days or freeze for up to 2 months. Reheat in oven at 350°F for 15-20 minutes.
