  • 1 lb ground beef
  • 5 medium potatoes peeled and diced
  • 1 small onion diced
  • 2 cloves garlic minced
  • 3 cups beef broth
  • 1 cup heavy cream
  • 1 cup shredded cheddar cheese
  • 2 tbsp butter
  • salt and pepper to taste
  • fresh chives chopped, for garnish

Instructions
 

  • Step 1: Melt 2 tablespoons of butter in a large pot over medium heat.
  • Step 2: Add ground beef and cook until fully browned, breaking it up with a spoon as it cooks.
  • Step 3: Stir in diced onion and minced garlic; cook for 3–4 minutes until onion is translucent and soft.
  • Step 4: Add diced potatoes and beef broth. Bring to a boil, then reduce heat to simmer gently for 20–25 minutes until potatoes are tender.
  • Step 5: Stir in heavy cream and shredded cheddar cheese off heat until cheese melts and soup is creamy.
  • Step 6: Season with salt and pepper to taste. Ladle into bowls and garnish with chopped fresh chives. Serve warm.

Notes

For a lighter version, substitute milk for heavy cream, or try different cheeses like Monterey Jack. Add extras such as diced carrots or celery for more veggies. Store leftovers in the fridge up to 3-4 days or freeze for up to 3 months. Reheat gently with a splash of broth or cream if needed.
