This Cheesy Ground Beef Rice Casserole recipe is a comforting and easy-to-make dish, perfect for a weeknight dinner or potluck. It features ground beef, onion, cooked rice, cream of mushroom soup, cheddar cheese, and seasonings.

  • 1 lb ground beef I prefer 80/20 for the best flavor and texture
  • 1 small onion diced (adds a lovely sweetness)
  • Salt and pepper to taste (don't be shy!)
  • 2 cups cooked white rice leftover rice works perfectly!
  • 1 can (10.5 oz) cream of mushroom soup the creamy base of this deliciousness
  • 2 cups shredded cheddar cheese sharp cheddar is my go-to, but experiment!
  • 0.5 cup milk helps create a smoother, creamier texture
  • 0.5 tsp garlic powder for an extra punch of flavor
  • 0.5 tsp paprika adds a subtle smokiness
  • chopped parsley optional, for a fresh, vibrant garnish

Instructions
 

  • Preheat your oven to 350°F (175°C).
  • Cook the ground beef and diced onion in a large skillet over medium heat until the beef is browned. Break up the beef with a spoon as it cooks for even browning.
  • Drain off any excess grease.
  • Season the beef mixture generously with salt, pepper, garlic powder, and paprika. Taste and adjust seasonings as needed.
  • In a large bowl, combine the cooked rice, cream of mushroom soup, milk, 1 1/2 cups of the shredded cheddar cheese, and the seasoned beef. Mix everything together until it’s well combined.
  • Pour the mixture into a greased 9x13 inch baking dish.
  • Sprinkle the remaining 1/2 cup of cheddar cheese over the top.
  • Bake uncovered for 20-25 minutes, or until the casserole is hot and bubbly, and the cheese is melted and golden brown.
  • Garnish with fresh parsley, if desired, and let it cool slightly before serving.

Notes

Feel free to get creative! Try different cheeses, add vegetables, or add a spicier kick. This casserole can be prepped ahead of time. Leftovers can be stored in the refrigerator for up to 3 days. It can also be frozen unbaked.
