Ingredients
  

For the Cheeseburger Quesadillas

  • 1 pound ground beef or turkey
  • 1 tsp Worcestershire sauce
  • 1 tsp smoked paprika
  • 0.5 tsp onion powder
  • 0.5 tsp garlic powder
  • 2 tsp dried minced onions
  • salt and black pepper to taste
  • 1 tsp olive oil or butter plus more for cooking tortillas
  • 8 flour tortillas 8-inch
  • 0.5 cup cheddar cheese grated
  • 0.5 cup mozzarella cheese grated
  • 0.25 cup diced pickles

For the Burger Sauce

  • 0.5 cup mayonnaise
  • 2 tbsp ketchup
  • 2 tbsp pickle relish
  • 1 tsp sweetener or sugar to taste
  • 0.5 tsp paprika
  • 0.5 tsp onion powder
  • 0.5 tsp vinegar white or apple cider
  • 0.25 tsp yellow mustard
  • salt and black pepper to taste

Instructions
 

  • Step 1: Grab a nice big mixing bowl. Toss in your ground beef or turkey, Worcestershire sauce, smoked paprika, onion powder, garlic powder, dried minced onions, and a good pinch of salt and pepper. Mix everything until just combined, ensuring seasonings are evenly distributed without overmixing.
  • Step 2: Heat 1 teaspoon of olive oil or butter in a non-stick skillet over medium heat. Add your seasoned meat mixture, break it apart, and cook until beautifully browned and fully cooked through (about 6-8 minutes). Drain off any excess grease.
  • Step 3: Lay tortillas flat. On one half of each tortilla, spread an even layer of cooked meat mixture. Sprinkle with grated cheddar cheese, mozzarella cheese, and diced pickles. Fold the empty half over the filling to create a half-moon shape.
  • Step 4: Wipe out the skillet if needed, then add a little more olive oil or butter. Cook folded quesadillas in batches over medium heat until golden brown and crispy on both sides (about 3-4 minutes per side). The cheese inside should be perfectly melted and gooey. Gently press down with a spatula for extra crispiness.
  • Step 5: While quesadillas cook, prepare the burger sauce. In a separate bowl, combine mayonnaise, ketchup, pickle relish, sweetener (or sugar), paprika, onion powder, vinegar, and mustard. Whisk until smooth and creamy. Taste and adjust salt and pepper if needed.
  • Step 6: Transfer cooked quesadillas to a cutting board. Slice each into easy-to-handle wedges. Serve hot with a generous bowl of homemade burger sauce for dipping.

Notes

Substitutions & Additions: You can use ground chicken, plant-based meat, or shredded chicken. Experiment with Monterey Jack, Colby, or Pepper Jack cheese. Add finely diced fresh onions, bell peppers, corn to the meat, or shredded lettuce and chopped tomatoes after cooking. Crispy bacon bits add great flavor. Spice it up with cayenne pepper or hot sauce in the meat or sauce. Finely chop fresh pickles if you don't have relish.
Tips for Success: Don't overstuff quesadillas. Cook on medium heat to prevent burning and ensure cheese melts. Always drain excess grease from the meat. Using butter for cooking tortillas adds flavor and crispness. Press down with a spatula for extra crispiness. Cook in batches, don't overcrowd the pan. Prep the meat and sauce ahead of time (up to 1-2 days in advance).
Storage & Reheating: Store cooked quesadillas in an airtight container in the refrigerator for 3-4 days. Reheat in a dry skillet, air fryer, or toaster oven for crispiness. Cooked quesadillas can be frozen for 2-3 months; reheat from frozen in a toaster oven or oven. Store burger sauce in an airtight container in the fridge for up to a week.
