  • 0.5 onion finely diced
  • 1 bell pepper finely diced
  • 2 cloves garlic minced
  • 1 tbsp Cajun seasoning adjust to preferred spice level
  • Salt and pepper to taste
  • 0.25 cup chicken broth
  • 0.25 cup heavy cream
  • 0.5 cup shredded cheddar cheese
  • 0.25 cup shredded mozzarella cheese
  • 4 burger buns toasted

Instructions
 

  • Step 1: Grab your favorite large skillet and set it over medium heat. Drizzle in your olive oil. Once it's shimmering, toss in your finely diced onion and bell pepper. Let them soften up, stirring occasionally, for about 3-4 minutes. Then, add your minced garlic and sauté for just one more minute until fragrant.
  • Step 2: Add your ground chicken to the skillet. Use your spatula to break it up into nice, small crumbles. Sprinkle in your generous tablespoon of Cajun seasoning, along with a good pinch of salt and a few grinds of pepper. Cook the chicken, continuing to break it up, until it’s no longer pink – usually around 5-7 minutes.
  • Step 3: Once your chicken is beautifully cooked, pour in the chicken broth and the glorious heavy cream. Give it a good stir and bring the mixture to a gentle simmer. Let it bubble away for 2-3 minutes; you'll notice it start to thicken up into that perfect sloppy joe consistency.
  • Step 4: Take the skillet off the heat and generously sprinkle in your shredded cheddar and mozzarella cheeses. Stir, stir, stir until the cheeses are completely melted and the whole mixture is wonderfully creamy and gooey.
