Equipment

  • Saucepan
  • Mixing bowls
  • Baking sheets
  • Wire rack

Ingredients

  • 1 cup unsalted butter The star of the show! We'll be browning this for extra nutty flavor.
  • 1 cup packed brown sugar Adds moisture and that deep, caramel-like sweetness.
  • 1/2 cup granulated sugar Balances the brown sugar's richness.
  • 2 large eggs Binds everything together nicely.
  • 2 teaspoons vanilla extract Enhances the overall flavor - don't skip this!
  • 2 1/2 cups all-purpose flour The base of our cookie dough.
  • 1 teaspoon baking soda For a little lift.
  • 1/2 teaspoon salt Balances the sweetness and enhances the other flavors.
  • 1 1/2 cups semi-sweet chocolate chips Classic and oh-so-delicious!
  • 1 1/2 cups Rice Krispies cereal Adds a delightful crunch and fun texture.

Instructions

  • First, you'll brown the butter. Melt the butter in a saucepan over medium heat. Stir frequently until it turns a beautiful golden brown and smells nutty. Remove from heat and let it cool slightly.
  • Next, cream together the brown sugar and granulated sugar with the cooled brown butter. Beat in the eggs and vanilla extract until well combined. In a separate bowl, whisk together the flour, baking soda, and salt. Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Don't overmix!
  • Now for the fun part! Gently fold in the chocolate chips and Rice Krispies cereal.
  • Preheat your oven to 350°F (175°C). Line your baking sheets with parchment paper. Drop rounded tablespoons of dough onto the prepared baking sheets, leaving about 2 inches between each cookie.
  • Bake for 10-12 minutes, or until the edges are golden brown and the centers are still slightly soft. They'll firm up as they cool.
  • Let the cookies cool on the baking sheets for about 5 minutes before transferring them to a wire rack to cool completely.

Notes

Feel free to get creative! Try using different types of chocolate chips, add nuts, or experiment with other cereals. You can also add a teaspoon of cinnamon or nutmeg.
