Ingredients
  

For the Blackened Shrimp Stroganoff

  • 1 lb fresh shrimp peeled and deveined
  • 1 tbsp olive oil
  • 1 tbsp Cajun seasoning or homemade blend
  • 6 oz fettuccini pasta
  • 1 tbsp butter for sautéing mushrooms and shallots
  • 3 cups fresh mushrooms sliced
  • 1 tbsp shallots chopped
  • cup chicken broth for deglazing
  • ½ cup sour cream gives creamy, tangy character
  • 1 tbsp cornstarch thickens the sauce
  • 1 cup chicken broth added to sour cream mixture
  • 7 oz roasted red bell peppers drained and chopped
  • 1 tbsp capers drained

Instructions
 

  • Step 1: Toss shrimp with olive oil and Cajun seasoning in a medium bowl until well coated. Let marinate while prepping other ingredients.
  • Step 2: Cook fettuccini pasta in salted boiling water for 8–10 minutes until al dente. Drain and set aside.
  • Step 3: In a large frying pan over medium heat, melt butter, then sauté sliced mushrooms and chopped shallots until tender and golden. Remove and set aside.
  • Step 4: Cook seasoned shrimp in the same pan for 2–3 minutes until pink. Remove and set aside with mushrooms.
  • Step 5: Pour ⅔ cup chicken broth into the pan to deglaze. Bring to a boil and reduce uncovered until about ¼ cup remains.
  • Step 6: Stir sour cream and cornstarch until smooth in a small bowl. Gradually add 1 cup chicken broth to this mixture, then pour into the pan with reduced broth.
  • Step 7: Cook sauce over medium heat, stirring constantly until thickened and bubbling, about 1 minute.
  • Step 8: Return shrimp, sautéed mushrooms, roasted red bell peppers, and capers to the pan. Stir to combine and heat through. Season with salt and pepper to taste.
  • Step 9: Serve stroganoff over cooked fettuccini pasta and enjoy!

Notes

Don’t overcook the shrimp to keep them tender. Reduce broth well for intense flavor. Stir sour cream mixture smoothly before adding to sauce. You can marinate shrimp ahead or cook mushrooms and shallots in advance to save time. Adjust salt last depending on Cajun seasoning saltiness.
