Equipment

  • Skillet
  • Non-stick Pan

Ingredients

  • 4 slices cinnamon roll bread
  • 8 slices cooked bacon crispy
  • 4 slices cheddar cheese
  • 4 tbsp BBQ sauce your favorite smoky, tangy touch
  • 2 tbsp butter

Instructions

  • Step 1: Prep Your Bread: Grab two slices of your cinnamon roll bread. On one side of each of these slices, spread about 1 tablespoon of your favorite BBQ sauce right to the edges.
  • Step 2: Layer the Bacon: On top of that BBQ sauce, lay down 2 slices of your perfectly cooked, crispy bacon on each of those bread slices, arranging them to cover as much surface as possible.
  • Step 3: Add the Cheese: Place one slice of cheddar cheese directly on top of the bacon on each bread slice.
  • Step 4: Form Your Sandwiches: Take the two remaining slices of cinnamon roll bread and place one on top of each of your layered halves, creating two glorious sandwiches.
  • Step 5: Heat the Skillet: Place a skillet or non-stick pan over medium heat. Let it warm up nicely, then add 1 tablespoon of butter and let it melt and sizzle.
  • Step 6: Grill to Golden Perfection: Carefully place one sandwich into the hot, buttered skillet. Cook it for about 3-4 minutes per side, or until the cinnamon roll bread is beautifully golden brown and the cheddar cheese inside is wonderfully melted and gooey.
  • Step 7: Repeat the Process: Remove the first sandwich from the skillet, add the remaining 1 tablespoon of butter, and repeat the grilling process with your second sandwich.
  • Step 8: Serve Hot & Enjoy: Once both sandwiches are done, carefully cut each one in half. Serve them immediately while they're warm and the cheese is still wonderfully molten.

Notes

This recipe is incredibly versatile. For bread swaps, try brioche, challah, or thick-cut white bread; if using plain bread, sprinkle with cinnamon sugar. For cheese, experiment with pepper jack, provolone, or smoked gouda. Bacon can be substituted with turkey bacon or candied bacon. Choose your favorite BBQ sauce—honey, chipotle, or tangy Carolina-style. Fun additions include a thin slice of Granny Smith apple, caramelized onions, a thin schmear of cream cheese, or a maple drizzle after grilling. Always use medium heat for grilling to prevent burning and ensure cheese melts. Ensure bacon is fully cooked and crispy beforehand, as it won't cook sufficiently during grilling. Spread BBQ sauce and cheese evenly for balanced flavor. Be gentle when flipping thin bread slices. Press down gently with a spatula during cooking for an extra crispy crust. Best enjoyed hot and fresh. Leftovers can be stored wrapped tightly in foil or plastic wrap in the refrigerator for up to 1-2 days. Reheat in a skillet over medium-low heat, an air fryer (350°F/175°C for 4-6 minutes, flipping halfway), or a conventional oven (350°F/175°C) to restore crispness. Avoid reheating in the microwave as it can make the bread soggy.
