Instructions
 

  • Step 1: Preheat your oven to 375°F (190°C). Lightly grease a baking sheet or line it with parchment paper to prevent sticking.
  • Step 2: In a large mixing bowl, combine the flour, sugar, baking powder, salt, cinnamon, and nutmeg. Whisk until nicely blended to distribute leavening and spices evenly.
  • Step 3: In a separate bowl, whisk together the milk, eggs, vanilla extract, and melted butter until smooth and combined.
  • Step 4: Pour the wet mixture into the bowl with your dry ingredients. Stir gently until just combined, being careful not to overmix (a few lumps are fine).
  • Step 5: Gently fold the diced apples into the batter until they are distributed throughout.
  • Step 6: Drop spoonfuls (about 1.5 tablespoons each) of batter onto your prepared baking sheet, spacing them about 2 inches apart.
  • Step 7: Bake for 15-18 minutes, or until the fritters are golden brown and a toothpick inserted into the center comes out clean.
  • Step 8: While the fritters bake, prepare the glaze: In a small bowl, whisk together powdered sugar, milk, and vanilla extract until super smooth and easily drizzlable. Adjust thickness with more milk or powdered sugar if needed.
  • Step 9: As soon as the fritters come out of the oven, while still warm, drizzle the luscious glaze all over them. Serve immediately.

Notes

Substitutions & Additions: Experiment with different apple varieties (Fuji, Gala, Granny Smith). Add a pinch of cardamom or allspice, or a teaspoon of lemon/orange zest. For crunch, include 1/4 cup chopped walnuts or pecans. Dried fruit like raisins or cranberries also work. Try a maple glaze (powdered sugar, maple syrup, milk) or a cream cheese glaze. Make them mini by dropping smaller spoonfuls of batter.
Tips for Success: Do not overmix the batter to keep fritters light and fluffy. Dice apples evenly (1/4 to 1/2 inch) for uniform cooking. Don't crowd the baking sheet. Glaze fritters while warm for a glossy finish. You can prep apples (with lemon juice) and dry ingredients a day ahead.
Storage: Store cooled, unglazed fritters in an airtight container at room temperature for up to 2 days. Glazed fritters are fine for a day. In the fridge, they last up to 4 days. Reheat in the microwave (15-20 seconds) or toaster oven (300°F/150°C for a few minutes).
