This Bacon Ranch Chicken Pasta Salad is a total throwback to those happy summer potlucks, but with a seriously easy twist! It's perfect for a quick weeknight dinner, a casual get-together, or even a packed lunch – and it’s ready in under 30 minutes!

Ingredients
  

  • 12 oz rotini pasta any short pasta will work
  • 2 cups cooked chicken breast diced or shredded
  • 1 cup cooked bacon chopped, crispy
  • 1 cup shredded cheddar cheese sharp cheddar, Monterey Jack or Colby Jack
  • 1 cup cherry tomatoes halved
  • 0.5 cup red onion finely chopped
  • 0.5 cup chopped green onions or chives
  • 1 cup ranch dressing
  • salt and pepper to taste

Instructions
 

  • Step 1: Cook pasta according to package directions until al dente. Drain, rinse with cold water, and cool completely.
  • Step 2: Cook bacon until crispy. Once cool, chop it. Dice your chicken and prep your vegetables while the bacon is cooling.
  • Step 3: Combine cooled pasta, chicken, bacon, cheese, tomatoes, red onion, and green onions in a large bowl.
  • Step 4: Add ranch dressing and toss to coat. Season with salt and pepper to taste.
  • Step 5: Refrigerate for at least 1 hour before serving.

Notes

Feel free to get creative! Try different cheeses, veggies, protein, or dressings.
