  • 2 cups all-purpose flour The base of our delicious fritters.
  • 0.25 cup granulated sugar For a touch of sweetness.
  • 2 teaspoons baking powder The secret to light and fluffy fritters.
  • 0.5 teaspoon salt Enhances the flavors.
  • 1 teaspoon cinnamon Classic fall flavor!
  • 0.25 teaspoon nutmeg Adds a warm, comforting spice.
  • 2 large eggs Bind the ingredients together.
  • 0.5 cup milk Adds moisture and tenderness.
  • 0.5 cup unsweetened applesauce Adds moisture and a subtle sweetness (I love using homemade!).
  • 1 cup diced apples (peeled and cored) Granny Smith or Honeycrisp work wonderfully.
  • 1 teaspoon vanilla extract A touch of magic!
  • Oil for frying Vegetable or canola oil works best.
  • 1.5 cups powdered sugar The star of our sweet glaze.
  • 2 tablespoons milk Adjust for desired consistency.
  • 0.5 teaspoon vanilla extract Because everything is better with vanilla!

Instructions
 

  • Whisk together flour, sugar, baking powder, salt, cinnamon, and nutmeg in a medium bowl. This is your dry ingredient mixture.
  • In a separate bowl, whisk together eggs, milk, applesauce, and vanilla. This is your wet ingredient mixture. Gradually add the wet ingredients to the dry ingredients, mixing until just combined. Don't overmix! Then, gently fold in the diced apples.
  • Heat your oil to 350°F (175°C) in a deep pot. Drop spoonfuls of batter into the hot oil, making sure not to overcrowd the pot. Fry for 2-3 minutes per side, or until golden brown and cooked through. Use a slotted spoon to remove the fritters and place them on a plate lined with paper towels to drain excess oil.
  • While the fritters are still warm, whisk together the powdered sugar, milk, and vanilla to make the glaze. Dip each warm fritter into the glaze, letting the excess drip off. Place them on a wire rack to cool completely.

Notes

Don't overcrowd the pot when frying. This will lower the oil temperature and result in greasy fritters. Make sure your oil is hot enough before adding the batter. If it's too cool, the fritters will absorb too much oil. The batter is best used immediately. Don’t let it sit for too long. For a head start, prep your apples and dry ingredients the night before. Store leftover Apple Fritter Bites in an airtight container at room temperature for up to 2 days, or in the refrigerator for up to 3 days. Reheat gently in a low oven or microwave before serving.
