These ridiculously easy and addictive Alabama Firecrackers are a legendary spicy snack, perfect for potlucks, game days, and BBQs. Simple to make with minimal ingredients, they feature crackers infused with a fiery, herby oil overnight for maximum flavor.

Ingredients
  

  • 12 oz box crackers saltine or Ritz style
  • 0.75 cup olive oil
  • 2 tbsp Italian seasoning
  • 3 tbsp chili flakes

Instructions
 

  • Step 1: Grab a large, sturdy resealable bag (gallon-sized recommended). Gently place crackers into the bag. Pour in ¾ cup olive oil, seal the bag (leaving a little air helps with tossing), and gently tumble until crackers are nicely coated.
  • Step 2: Open the bag and add 2 tablespoons Italian seasoning and 3 tablespoons chili flakes. Seal the bag TIGHTLY and shake vigorously (flip, tumble, and shake) to ensure seasonings are absolutely, completely distributed and clinging to every cracker.
  • Step 3: Allow your seasoned crackers to sit at room temperature overnight (8-12 hours is perfect, minimum 4 hours will do). This is crucial for the oil and spices to fully penetrate. Every now and then, give the bag another gentle flip or shake for even absorption.
  • Step 4: Once they've had their beauty sleep, they're ready to serve! These are fantastic on their own, or try serving with a cool, creamy dip like ranch, a savory cheese spread, or as an addition to a loaded baked potato bar or crumbled over your favorite chili.

Notes

Substitutions & Additions: Experiment with different crackers like oyster crackers, pretzel snaps, or Cheez-Its. Olive oil can be swapped for vegetable oil or canola oil. Enhance seasonings with a tablespoon of dried dill, a teaspoon or two of garlic powder or onion powder, a half teaspoon of smoked paprika, or a good quality Cajun or Creole seasoning blend. Increase heat with a pinch of cayenne pepper. For a sweet and spicy twist, add a teaspoon of sugar or brown sugar. For a nutty crunch, toss in a cup of pecans or mixed nuts along with the crackers.
Tips for Success: Remember to be gentle when tossing the crackers to keep them whole. Don't rush the overnight soak—this step is key to infusing deep flavor. Flip and turn the bag regularly during the waiting period for an even coating. Use a good quality, thick resealable bag to prevent leaks. If you want them even crispier, after they've soaked, spread them out on a baking sheet and bake at 250°F (120°C) for 15-20 minutes, letting them cool completely before storing.
How to Store: Transfer the cooled crackers to an airtight container or another resealable bag. Store them at room temperature in your pantry. They'll stay fresh and flavorful for up to two weeks, though they typically don't last that long!
